Use this calculator to determine how much sugar remains in your kombucha after fermentation. Brix measures the grams of dissolved sugar per 100 milliliters of liquid, and a refractometer provides this reading directly. Enter your measurements below and the calculator converts them into practical sugar content for your chosen serving size.

  • Calibrate your refractometer with distilled water before taking any measurements. Ensure all liquids (distilled water, base tea, and kombucha) are at the same temperature for accurate results.
  • Measure your base tea (brewed tea before adding sugar) on the refractometer and enter the result in the Base Tea Brix Reading field. This accounts for dissolved solids in the tea that are not sugar. If you have not measured your base tea, leave this field at 0.
  • Measure your finished kombucha on the refractometer and enter the result in the Raw Brix Reading field. Accept decimals (3.5), fractions (7/2), or mixed numbers (3 1/2) as input.
  • Enter the amount of kombucha you plan to drink in the Serving Size field. Select fluid ounces or milliliters from the Serving Unit dropdown. Common serving sizes include 8 oz, 12 oz, and 16 oz.
  • Click the Calculate button or wait for results to update automatically. The calculator displays the adjusted Brix value, total sugar in grams, sugar in teaspoons, and calories from sugar.

The core formula is: Sugar (grams) = Adjusted Brix x (Serving Size in mL / 100). Adjusted Brix equals the raw Brix reading minus the base tea Brix reading. One fluid ounce equals 29.5735 milliliters. One teaspoon of granulated sugar weighs approximately 4.2 grams, and each gram of sugar provides 4 calories.
