Chaptalization is the process of adding sugar to grape must before or during fermentation to increase the potential alcohol content of the finished wine. This calculator determines the exact amount of sugar needed to raise the Brix of your must from its current level to your desired target. The underlying formula is straightforward: for every gallon of wine, adding 1.5 ounces of sugar raises the Brix by one degree. The calculator extends this relationship to any volume and any Brix difference, with full support for metric and imperial units.
- Enter the Current Brix reading from your refractometer or hydrometer. Accept decimals such as 20.5, fractions such as 41/2, or mixed numbers such as 20 1/4.
- Enter the Desired Brix level you want to achieve after adding sugar. This value must be higher than the current Brix.
- Enter the Wine Volume, which is the expected volume of finished wine, not the total must volume. If you do not know your expected wine volume, multiply your must volume by 0.65 as an estimate. For example, 11.5 gallons of must yields roughly 7.5 gallons of wine.
