Chaptalization is the process of adding sugar to grape must before or during fermentation to raise the potential alcohol content of the finished wine. The relationship behind it is straightforward: for every gallon of wine, adding 1.5 ounces of sugar raises the Brix by one degree. Extending that relationship to any volume and any Brix difference gives the exact amount of sugar needed to move a must from its current Brix to a desired target.

Current Brix comes from a refractometer or hydrometer reading of the must before any sugar addition. Desired Brix is the level to reach afterward, and it must be higher than the current reading. Wine volume is the expected volume of finished wine, not the total must volume, since pressing and racking losses mean the two differ; a rough estimate when the finished volume is not yet known is to multiply the must volume by 0.65, so 11.5 gallons of must yields roughly 7.5 gallons of wine.

The formula is Sugar (oz) = 1.5 x Volume (gallons) x (Desired Brix - Current Brix). Liters convert to gallons internally before the formula runs, and the ounce result converts to grams, kilograms, or pounds using standard unit factors when a different sugar unit is preferred.

A must reads 20 Brix and needs to reach 24 Brix across an expected 5 gallons of finished wine. Sugar needed is 1.5 x 5 x (24 - 20) = 1.5 x 5 x 4, or 30 ounces.

Chaptalization is common in winemaking regions where growing conditions do not always produce grapes with optimal sugar levels, and precise sugar additions matter for consistent fermentation results.

  • Home Winemaking: Determine exactly how much table sugar to dissolve into a must when grapes came in at 19 Brix but the recipe needs 24 Brix for a balanced finished wine with 13 to 14 percent alcohol.
