Freeze distilling, also called fractional freezing, concentrates the alcohol in beer or another beverage by removing frozen water while the alcohol itself stays largely in the liquid phase. The new alcohol by volume (ABV) after that removal is found by dividing the total alcohol content by the remaining liquid volume.

Starting beer volume and starting ABV describe the beverage before freezing; starting ABV typically runs 4% to 12% for most beer styles. Two methods reach the final volume differently: removal of ice uses the volume of ice taken out of the container, while draining beer uses the volume of concentrated beer drained directly, which skips the ice measurement altogether.

The formula is New ABV = (Starting Volume x Starting ABV) / Final Volume. For the ice removal method, final volume equals starting volume minus the volume of ice removed. For the draining method, final volume equals the volume of beer drained directly. Both methods describe the same physical process from two different measurements, since the volume removed as ice and the volume remaining as drained beer are two sides of the same starting volume, and either one is enough to solve for the new ABV.

A 20-liter batch at 6% ABV loses 25% of its volume as ice, 5 liters, leaving 15 liters of concentrated beer. New ABV = (20 x 6) / 15 = 120 / 15, or 8% ABV.

Freeze distilling has practical applications across homebrewing, commercial brewing, and beverage experimentation, letting the alcohol concentration that results from fractional freezing be predicted and controlled rather than guessed at.

  • Eisbock Production: Crafting the traditional Bavarian Eisbock style means freezing a strong bock beer and removing approximately 25% of the volume as ice. Working from the starting volume and ABV verifies the final strength falls within the 9% to 14% ABV range typical of the style.
  • Homebrewing Experimentation: Different freeze distilling ratios can be tested on small batches: starting from a 20-liter batch at 6% ABV and removing varying amounts of ice compares the resulting concentrations before committing to a full batch.
  • Cider and Mead Concentration: Freeze distilling applied to hard cider or mead intensifies flavors and raises alcohol content; the starting volume and ABV of the cider show how much ice removal reaches a target strength.
  • Recipe Planning: A grain bill and target original gravity can be planned with the final freeze-distilled ABV in mind, working backward from a desired ABV of 12% to determine how much volume reduction is required from a 5% starting beer.
  • Quality Control: Concentration factors above 3x may produce harsh flavors from over-concentrated fusel alcohols and other compounds, so staying within reasonable limits matters as much as hitting the target ABV.
