International Bitterness Units (IBUs) quantify the bitterness hops contribute to beer during the boil, predicted here from hop additions, boil parameters, and gravity. Two formulas cover the two methods most widely used in homebrewing: Tinseth, the default and the one most modern brewing software builds on, and Rager, which uses a utilization lookup table and a gravity adjustment factor instead. Matching the formula to whichever one a given brewing software or published recipe already uses keeps IBU figures comparable across sources.
Pre-boil and post-boil volume set the concentration the hops are boiling in; a typical 5.5-gallon all-grain batch runs a 7-gallon pre-boil volume, while extract brewing typically starts around 3 gallons. Target original gravity (OG), in 1.xxx format, combines with those volumes to estimate the actual boil gravity, which both formulas use to adjust hop utilization at higher gravities. Each hop addition needs a weight, an alpha acid percentage (printed on the hop packaging), a boil time, and a form, whole or pellet; pellet hops receive a 10% utilization bonus over whole hops of the same alpha acid and boil time, since pellets break down more completely in the boil.
The Tinseth formula calculates utilization from a bigness factor, 1.65 x 0.000125^(BG - 1), and a boil time factor, (1 - e^(-0.04 x time)) / 4.15. IBU per addition equals (alpha acid / 100 x amount in ounces x 7490) / post-boil gallons x utilization. The Rager formula instead looks up utilization from a table indexed by boil time and applies a gravity adjustment whenever boil gravity exceeds 1.050. Settings holds a hop utilization multiplier for dialing in a specific system's efficiency and a step-by-step breakdown of each addition's contribution. Because utilization compounds with boil time, a bittering addition at 60 minutes contributes far more IBU per gram of alpha acid than the same hop added at 15 minutes, which is the mechanism behind separating a recipe's additions into bittering, flavor, and aroma charges in the first place.
Predicting hop bitterness is essential for designing balanced beer recipes. Knowing expected bitterness before brew day, whether the target is a light lager at 10 IBUs or a hop-forward IPA pushing past 70, prevents costly surprises whether the calculation happens during recipe formulation, on brew day for last-minute adjustments, or while comparing hop varieties and schedules.
